Microbiota accessible carbohydrates, often shortened to MACs, are the parts of plant foods, such as certain fibers and resistant starches, that escape digestion in the small intestine and reach the colon, where gut bacteria ferment them into compounds like short-chain fatty acids. People mostly look at them for gut and metabolic health, but little research on them has been reviewed here so far. Because of that, it is too early to say what they do for any particular outcome.
